Microgreens are bite size herbs and vegetables that are harvested anywhere from 7-20 days old. We love microgreens for their taste, nutrients, and versatility. Microgreens can be used to elevate the look and taste of nearly any dish. Some of our favorite uses for microgreens include: garnishing pastas, soups, or salads; adding a nutritional punch to green juices and smoothies; or substituting lettuce in sandwiches, burgers, or tacos to enhance flavor.
Microgreens refer to the second stage in a plants life and are harvested when the first two leaves are fully expanded before the true leaves form. These first two leaves, also known as the seed leaves, are the reason microgreens are so high in nutrients. These seed leaves provide nutrients to the seed, allowing it to grow into a mature plant. The USDA looked further into this in 2012 and found microgreens had 4 to 40 times more nutrition than their mature counterparts. This means just a few servings of microgreens can improve heart health, reduce your risk of Alzheimer’s disease and certain cancers, and lower inflammation.
One reason microgreens aren’t widely used is because of their short shelf life, lasting 2-3 days once cut. Because of this, we sell all our microgreens still growing in living containers. This increases the shelf-life to 7-14 days, allowing more flexibility and enjoyment!
